Caribbean Tomato Salad 2

Caribbean Tomato Salad 2 is a staple on family tables across the islands, where its simplicity and freshness make it a beloved choice for everyday meals. It’s often prepared without fuss, just a handful of ingredients that speak of the sun-soaked gardens they come from. This is the version home cooks rely on, adjusting salt by feel and adding a generous drizzle of olive oil, embodying the essence of Caribbean cooking.

Expect a burst of vibrant flavors with each bite—juicy tomatoes mingling with crisp cucumber, all brightened by a squeeze of lemon. The fragrance of fresh herbs punctuates the dish, making it a refreshing counterpart to the rich, spicy flavors typical of Caribbean cuisine. There's no ceremony here—just a simple, honest salad that invites everyone to dig in.

Ingredients

  • 3tomatoes
  • 1cucumber
  • 80 mlolive oil
  • lemonjuiced
  • herbs — chopped
  • to tastefine sea salt

Method

  1. Begin by washing 3 tomatoes and 1 cucumber thoroughly under cold running water to remove any dirt. Pat them dry with a clean kitchen towel. Slice the tomatoes into thin wedges and the cucumber into thin rounds. Aim for uniform slices to ensure even flavor distribution.
  2. Place the sliced tomatoes and cucumber into a large mixing bowl. This will give you enough space to toss the salad without spilling.
  3. In a small bowl, combine 80 ml of olive oil with the juice of one lemon. Whisk them together until they form a smooth, emulsified dressing. This mixture will provide the salad with a rich, tangy flavor.
  4. Pour the dressing over the sliced tomatoes and cucumber in the mixing bowl. Sprinkle fine sea salt to taste, keeping in mind that the salt will enhance the natural flavors of the vegetables.
  5. Add your choice of fresh herbs to the bowl, such as cilantro or parsley, finely chopped. These herbs will add a fresh, aromatic note to the salad.
  6. Using a large spoon or salad tongs, gently toss the salad. Be careful to keep the tomato wedges intact while ensuring the dressing and herbs are evenly distributed. The salad should look glossy and vibrant, with the herbs clinging to the vegetables.
  7. Transfer the salad to a serving dish. Serve immediately with fresh bread on the side, allowing everyone at the table to enjoy the fresh, bright flavors of the Caribbean Tomato Salad 2.
