Ingredients

  • 400 gcooked beans
  • 1onion
  • 80 mlolive oil
  • 2 tbspvinegar
  • parsley — chopped
  • to tastefine sea salt

Method

  1. Start by finely slicing 1 onion. Use a sharp knife to ensure thin, even slices, which will blend well with the beans. Set the sliced onion aside in a large mixing bowl.
  2. Add 400 g of cooked beans to the bowl with the sliced onions. Ensure the beans are well-drained to prevent excess moisture from diluting the dressing.
  3. In a small bowl, combine 80 ml of olive oil and 2 tbsp of vinegar. Whisk them together until the mixture appears slightly thickened and emulsified. This will ensure the dressing coats the salad evenly.
  4. Pour the dressing over the beans and onions in the large mixing bowl. Sprinkle fine sea salt to taste, starting with a small pinch and adjusting as needed. The salt should enhance the flavors without overpowering them.
  5. Gently toss the salad using two large spoons or your hands, taking care to keep the beans intact. The goal is to evenly distribute the dressing while maintaining the shape and texture of the beans.
  6. Finely chop a handful of parsley and sprinkle it over the salad. The parsley should add a fresh, vibrant note without overwhelming the other flavors.
  7. Serve the Chinese Bean Salad 2 immediately, accompanied by fresh bread. The salad should be enjoyed at room temperature, allowing the flavors to meld together harmoniously.
