Ingredients

  • 400 gcooked beans
  • 1onion
  • 80 mlolive oil
  • 2 tbspvinegar
  • parsley — chopped

Method

  1. Start by finely chopping 1 onion. The goal is to achieve small, even pieces that will blend seamlessly with the beans, providing a mild sweetness and crunch without overpowering the dish. Set the chopped onion aside.
  2. In a large mixing bowl, combine 400 g of cooked beans with the chopped onion. Use a bowl that is large enough to allow for gentle mixing without spilling. The beans should be cool to the touch, ensuring they maintain their firmness and do not become mushy.
  3. Drizzle 80 ml of olive oil over the bean and onion mixture. The oil will add richness and help the other ingredients adhere to the beans. Follow with 2 tbsp of vinegar, which will provide a bright, tangy contrast to the oil's richness.
  4. Add fine sea salt to taste. Start with a small pinch, then mix and taste. Adjust as needed, keeping in mind that the salt should enhance the flavors without being too prominent.
