Colombian Bean Salad 2

Colombian Bean Salad 2 is a beloved staple at home tables across Colombia, reflecting the unpretentious and hearty nature of the country's cuisine. It is a dish that captures the essence of everyday cooking, where ingredients are measured by feel and intuition rather than precision, and the table is always set with the intention of sharing. This version stays true to its roots, offering a taste of genuine Colombian hospitality.

The salad is a delightful blend of creamy beans, sharp onion, and the fresh bite of parsley, all brought together with a generous splash of olive oil and vinegar. The flavors are simple yet vibrant, each bite offering a satisfying contrast of textures and tastes. It is an uncomplicated dish that lets the quality of its ingredients shine, seasoned with just the right amount of fine sea salt to enhance its natural flavors.

Ingredients

  • 400 gcooked beans
  • 1onion
  • 80 mlolive oil
  • 2 tbspvinegar
  • parsley — chopped
  • to tastefine sea salt

Method

  1. Begin by finely dicing 1 onion. Aim for small, uniform pieces so they blend well with the beans and provide a consistent flavor throughout the salad. This will ensure that the onion's sharpness is evenly distributed.
  2. In a large mixing bowl, combine the 400 g of cooked beans with the diced onion. Use a spoon to gently mix them together, taking care not to mash the beans. The beans should remain whole to maintain the salad's texture.
  3. In a separate small bowl, whisk together 80 ml of olive oil and 2 tbsp of vinegar. The mixture should become slightly opaque and well-emulsified, which means the oil and vinegar have combined smoothly.
  4. Pour the olive oil and vinegar dressing over the bean and onion mixture. Sprinkle fine sea salt to taste, starting with a small pinch and adjusting as needed. The salt should enhance the flavors without overpowering them.
  5. Gently toss the salad using a large spoon or your hands, ensuring the beans and onions are evenly coated with the dressing. Be careful to keep the beans intact, as they should retain their shape for the best texture.
  6. Chop a handful of parsley finely and sprinkle it over the salad. The parsley should add a fresh, aromatic note and a pop of color that complements the dish.
  7. Serve the Colombian Bean Salad 2 immediately with fresh bread on the side. The salad should be vibrant and aromatic, with the beans glistening from the dressing and the parsley adding a fresh finish.
