Colombian Bean Salad 3

Colombian Bean Salad 3 is a staple of home-cooked meals across Colombia, embodying the art of intuitive cooking passed down through generations. This dish is a true reflection of how Colombian families approach their meals — with salt measured by feel and an abundant use of olive oil to enhance each ingredient. It captures the essence of everyday family life, where the table is always set for sharing, and the flavors are meant to bring comfort and satisfaction.

The salad offers a harmonious blend of creamy beans and crisp onion, brought to life with a generous splash of vinegar and fragrant parsley. Each bite delivers a balanced mix of tanginess and richness, with fine sea salt accentuating the natural flavors. This is Colombian home cooking at its finest, inviting you to savor the simplicity and warmth of a family meal.

Ingredients

  • 400 gcooked beans
  • 1onion
  • 80 mlolive oil
  • 2 tbspvinegar
  • parsley — chopped
  • to tastefine sea salt

Method

  1. Begin by finely chopping 1 onion. Use a sharp knife to ensure even pieces, which will blend well with the beans. Place the chopped onion in a large mixing bowl where you will combine all the salad ingredients.
  2. Add 400 g of cooked beans to the bowl with the onions. Ensure the beans are well-drained and cooled to room temperature to maintain their firmness and prevent them from becoming mushy when mixed.
  3. In a small bowl, combine 80 ml of olive oil and 2 tbsp of vinegar. Whisk them together until they are well emulsified. This will create a balanced dressing that coats the beans and onions evenly.
  4. Pour the dressing over the beans and onions in the mixing bowl. Add fine sea salt to taste, starting with a small pinch and adjusting as needed. The salt should enhance the flavors without overpowering the natural taste of the beans.
  5. Gently toss the salad using a large spoon or spatula. Be careful to mix the ingredients thoroughly while keeping the beans intact. The salad should look glossy with the dressing evenly distributed.
  6. Chop a handful of fresh parsley and sprinkle it over the salad. The parsley should be finely chopped to release its aroma and add a fresh, herbal note to the dish.
  7. Serve the Colombian Bean Salad immediately with fresh bread on the side. The salad should be vibrant and aromatic, with the beans holding their shape and the dressing glistening on each component.
