Ingredients

  • 1/2 headcabbage — shredded
  • 2carrots — grated
  • 200 gmayonnaise
  • 2 tbspapple cider vinegar

Method

  1. Begin by preparing the vegetables. Take 1/2 head of cabbage and remove any outer leaves that are wilted or damaged. Cut the cabbage in half, then slice it into thin strips, about 1/8 inch wide. Peel 2 carrots and grate them using the large holes of a box grater. Combine the sliced cabbage and grated carrots in a large mixing bowl.
  2. In a separate small bowl, prepare the dressing by combining 200 g mayonnaise, 2 tbsp apple cider vinegar, and 1 tsp fine sea salt. Stir the mixture until it is smooth and well-blended. The dressing should have a creamy consistency and a slightly tangy aroma from the vinegar.
  3. Pour the dressing over the cabbage and carrot mixture in the large mixing bowl. Use a spatula or large spoon to gently toss the ingredients together. Ensure that the dressing coats all the vegetables evenly, but be careful not to bruise the cabbage strips.
  4. Once the coleslaw is thoroughly mixed, taste a small amount to check the seasoning. If needed, adjust the salt to your preference, keeping in mind that the flavors will meld further as it sits.
