Eastern European Bean Salad

Eastern European Bean Salad is a staple on home tables across the region, a dish that transcends borders with its simple yet satisfying appeal. Traditionally served during family meals, it's a reminder of gatherings where dishes are passed around with ease and laughter. The recipe reflects the practical cooking style found in many Eastern European kitchens, where ingredients are measured with intuition and shared among loved ones.

This salad combines tender beans with the sharpness of raw onion and the fresh note of parsley, all enveloped in a generous drizzle of olive oil and a splash of vinegar. The flavors are bold yet balanced, with a touch of fine sea salt enhancing each element. It's a dish that invites you to savor each bite, embodying the spirit of communal dining.

Ingredients

  • 400 gcooked beans
  • 1onion
  • 80 mlolive oil
  • 2 tbspvinegar
  • parsley — chopped
  • to tastefine sea salt

Method

  1. Begin by finely chopping 1 onion. The pieces should be small enough to blend well with the beans, enhancing the flavor without overpowering any bite. Place the chopped onion in a large mixing bowl.
  2. Add 400 g of cooked beans to the bowl with the onion. Ensure the beans are well-drained and cooled to room temperature, as this will help the salad maintain a fresh, crisp texture.
  3. Pour 80 ml of olive oil over the beans and onion. The oil should coat the ingredients lightly, adding richness and helping the flavors meld together.
  4. Add 2 tablespoons of vinegar to the bowl. The vinegar provides a bright acidity that balances the richness of the olive oil and complements the earthiness of the beans.
  5. Season the salad with fine sea salt to taste. Start with a small amount, mix, and taste, adjusting as needed. The salt should enhance the natural flavors without being too dominant.
  6. Gently toss the salad using a large spoon or your hands. Be careful to keep the beans intact, as they can be delicate and may break apart if handled too roughly.
  7. Chop a handful of fresh parsley and sprinkle it over the salad. The parsley adds a fresh, herbal note and a pop of color, making the dish visually appealing.
  8. Serve the Eastern European Bean Salad immediately with fresh bread. The salad is best enjoyed fresh, with the flavors vibrant and the textures distinct.
