Filipino Cucumber Salad 2

Serves 4 to 6 Salad vegetarian, Salads

Filipino Cucumber Salad 2

Filipino Cucumber Salad 2 finds its roots in the everyday meals of Filipino households, where simplicity meets comfort. It’s a dish that graces the table without fuss, often accompanying a spread of grilled or fried dishes. This version captures the essence of home cooking, where measurements are intuitive and the emphasis is on creating a dish that feels as familiar as a warm embrace.

Expect a refreshing burst of flavors, with crisp cucumber slices dressed in creamy yogurt, subtly accented by dill and a whisper of garlic. The salt is added with care, enhancing each bite without overpowering the natural sweetness of the cucumbers. This salad stands as a cooling counterpoint to richer dishes, its simplicity inviting everyone to partake.

Ingredients

  • 2cucumbers
  • 200 gyogurt
  • 1 clovegarlic
  • dill — chopped
  • to tastefine sea salt

Method

  1. Start by washing and drying 2 cucumbers. Using a sharp knife, slice them thinly into rounds, about 1/8-inch thick. Place the cucumber slices in a colander set over a bowl, and sprinkle with a generous pinch of fine sea salt. Toss the cucumbers gently to ensure even coating, then let them sit for about 10 minutes. This will draw out excess moisture, enhancing their crispness.
  2. While the cucumbers are resting, prepare the dressing. In a small mixing bowl, combine 200 g of yogurt with a finely minced clove of garlic. Add a pinch of fine sea salt to taste, and stir until the mixture is smooth and the garlic is well distributed. The yogurt should have a creamy consistency with a subtle garlic aroma.
  3. After the cucumbers have released some of their water, gently pat them dry with a clean kitchen towel or paper towels. This step is crucial to prevent the salad from becoming watery. Transfer the cucumbers to a large mixing bowl.
  4. Add the yogurt dressing to the cucumbers. Sprinkle in some fresh dill, finely chopped, to taste. The dill will add a fresh, aromatic note to the salad. Drizzle with a little olive oil for richness, and gently toss everything together using a large spoon or your hands. Be careful to keep the cucumber slices intact for a pleasant texture.
  5. Taste the salad and adjust the seasoning with more fine sea salt if needed. The flavors should be balanced, with the creamy yogurt complementing the refreshing cucumbers and the aromatic dill.
  6. Serve the Filipino Cucumber Salad 2 immediately, while the cucumbers are still crisp and the dressing is cool. Pair it with freshly baked bread to soak up the creamy dressing, and enjoy it as part of a shared meal, as is traditional in Filipino home cooking.
