Ingredients

  • 150 gmixed greens
  • 60 mlolive oil
  • lemonjuiced
  • herbs — chopped
  • to tastefine sea salt

Method

  1. Start by preparing the components for the Filipino Herb Salad. Rinse 150 g of mixed greens thoroughly under cold running water to remove any dirt or grit. Shake off excess water and use a salad spinner to dry them completely. Place the greens in a large mixing bowl and keep them cool in the refrigerator until ready to use.
  2. Gather your choice of fresh herbs, such as cilantro, basil, or mint. Rinse them under cold water and pat them dry with a clean kitchen towel. Roughly chop the herbs and add them to the bowl with the mixed greens.
  3. In a small bowl, combine 60 ml of olive oil with the juice of one lemon. Whisk them together until they are well emulsified. Season the dressing with fine sea salt to taste, starting with a small pinch and adjusting as needed.
  4. Remove the mixed greens and herbs from the refrigerator. Pour the prepared dressing over the greens, ensuring even distribution. Use your hands or salad tongs to gently toss the salad, making sure the dressing coats all the leaves without bruising them.
  5. Taste a leaf to check the seasoning. Adjust with more salt or lemon juice if necessary, ensuring the flavors are balanced and vibrant.
  6. Transfer the dressed salad to a serving platter. Serve at once with crusty bread on the side, allowing everyone at the table to share and enjoy the fresh, herbaceous flavors.
