Indian Tomato Salad 2

Indian Tomato Salad 2, a staple in home kitchens across India, captures the simple yet vibrant essence of everyday meals. Eaten at lunch or dinner, it transforms ordinary ingredients into a refreshing dish that graces the family table. This version, passed down through generations, remains true to the way Indian family cooks prepare it—intuitively and without fuss.

Each bite bursts with the juiciness of ripe tomatoes and crisp cucumber, elevated by the richness of olive oil and a bright squeeze of lemon. A delicate sprinkle of fine sea salt ties it all together, while fresh herbs add a fragrant finish. This salad invites you to savor the authentic flavors of an Indian home, where simplicity meets generosity.

Ingredients

  • 3tomatoes
  • 1cucumber
  • 80 mlolive oil
  • lemonjuiced
  • herbs — chopped
  • to tastefine sea salt

Method

  1. Start by washing 3 tomatoes and 1 cucumber thoroughly under cold running water. Pat them dry with a clean kitchen towel. Slice the tomatoes into thin wedges and the cucumber into thin rounds. Place them in a large mixing bowl to allow for easy tossing later.
  2. In a small bowl, combine 80 ml of olive oil with the juice of one lemon. Whisk them together until the mixture appears slightly emulsified. This will be the dressing that adds a tangy and rich flavor to the salad.
  3. Pour the dressing over the sliced tomatoes and cucumber in the mixing bowl. Sprinkle fine sea salt to taste, starting with a small pinch and adjusting as needed. The salt should enhance the flavors without overpowering the freshness of the vegetables.
  4. Add a handful of fresh herbs of your choice, such as cilantro or mint, finely chopped. These herbs will add a burst of freshness and aroma to the salad, complementing the acidity of the lemon juice.
  5. Using two large spoons, gently toss the salad to ensure the dressing coats all the pieces evenly. Be careful not to break the tomato wedges or cucumber rounds; they should remain intact for a pleasing texture and presentation.
  6. Transfer the salad to a serving platter or individual plates. Serve immediately with your choice of bread, allowing the vibrant colors and fresh flavors to be enjoyed at their peak. This salad is best consumed fresh to appreciate the crispness of the vegetables and the brightness of the dressing.
