  1. Start by washing 150 g of mixed greens thoroughly under cold running water to remove any dirt or impurities. Use a salad spinner or pat them dry with a clean kitchen towel to ensure they are completely dry, which helps the dressing adhere better.
  2. Select a variety of fresh herbs such as cilantro, mint, and basil. Roughly chop about a handful of each, ensuring the pieces are not too fine to maintain their distinct flavors and textures. Keep these herbs cool until ready to use to preserve their freshness.
  3. In a small bowl, combine 60 ml of olive oil with the juice of one lemon. Whisk them together until they are well emulsified. This mixture will serve as the dressing, providing a bright, tangy flavor that complements the greens.
