Japanese Potato Salad

Japanese Potato Salad, or 'Poteto Sarada,' is a beloved staple at home-cooked meals across Japan. This dish captures the essence of comfort and communal dining, often appearing on tables during casual family dinners or shared potluck gatherings. Each family has its own twist, but the core remains the same — a simple yet satisfying blend of familiar ingredients.

The salad’s creamy texture comes from the generous use of Japanese mayonnaise, enveloping tender potatoes, crisp cucumber, and sweet carrot slices. Seasoned with fine sea salt, it achieves a balance of flavors that is both refreshing and indulgent. It's a dish that invites sharing, served as part of a varied spread to be enjoyed leisurely.

Ingredients

  • 4potatoes
  • 2 tbspJapanese mayonnaise
  • 1cucumber
  • 1carrot
  • to tastefine sea salt

Method

  1. Peel 4 potatoes and cut them into evenly sized chunks, about 1 inch each, to ensure they cook uniformly. Place the potato chunks in a large pot and cover them with cold water. Add a pinch of fine sea salt to the water to season the potatoes as they cook. Bring the pot to a boil over medium-high heat, then reduce to a simmer. Cook until the potatoes are tender and easily pierced with a fork, but not falling apart, which typically takes about 15 minutes.
  2. While the potatoes are cooking, prepare the vegetables. Peel 1 carrot and slice it into thin rounds, about 1/8 inch thick. Slice 1 cucumber into thin rounds as well. Sprinkle a little fine sea salt over the cucumber slices and let them sit for about 10 minutes to draw out excess moisture. Afterward, gently squeeze the cucumber slices to remove the water and set them aside.
  3. Once the potatoes are cooked, drain them in a colander and let them cool slightly. While they are still warm, transfer the potatoes to a large mixing bowl. Use a fork or potato masher to gently break them up, leaving some small chunks for texture. The warmth of the potatoes will help them absorb the dressing flavors better.
  4. Add the prepared carrot and cucumber slices to the bowl with the potatoes. Add 2 tablespoons of Japanese mayonnaise to the mixture. The mayonnaise will add creaminess and a slight tang to the salad, which is characteristic of Japanese Potato Salad.
  5. Gently toss the ingredients together using a large spoon or spatula, being careful not to mash the potatoes further. The goal is to coat everything evenly with the mayonnaise while keeping the potato chunks mostly intact. Taste the salad and adjust the seasoning with more fine sea salt if necessary, keeping in mind that the flavors will meld as the salad sits.
  6. Serve the Japanese Potato Salad immediately, or chill it in the refrigerator for a short time if you prefer it cold. This salad pairs well with bread and is best enjoyed fresh, as the flavors are most vibrant when first combined.
