Ingredients

Method

  1. Start by thoroughly washing 150 g of mixed greens and your choice of fresh herbs, such as parsley, mint, and cilantro. Use a salad spinner or pat them dry with a clean kitchen towel to ensure they're free of excess water, which can dilute the dressing.
  2. Place the dried greens and herbs into a large salad bowl. This will give you enough space to toss the salad without spilling.
  3. In a small bowl, combine 60 ml of olive oil with the juice of one lemon. Whisk them together until the mixture looks slightly thickened and well combined. This emulsification will help the dressing coat the greens evenly.
  4. Season the dressing with fine sea salt to taste. Start with a small pinch, then taste and adjust as needed. The salt should enhance the flavors without overpowering the freshness of the herbs.
