Pakistani Bean Salad 3

Pakistani Bean Salad 3 is a beloved staple that graces tables from Karachi to Islamabad, bringing a sense of familiar comfort to everyday meals. Rooted in home kitchens, this dish reflects the intuitive cooking style of Pakistani families, where salt is judged by hand and olive oil is used freely to enrich the flavors. It's a dish that embodies the simplicity and warmth of a shared meal, bringing together the vibrant culinary traditions of cities like Lahore and Peshawar.

The salad offers a satisfying blend of creamy beans, crisp onion, and a zingy vinegar dressing, all harmonized by the fresh brightness of parsley. The olive oil envelops each ingredient, enhancing their natural flavors and creating a lush mouthfeel. Served at room temperature, it's a versatile dish that can accompany a main meal or be enjoyed on its own, inviting everyone to savor its uncomplicated yet delightful taste.

Ingredients

  • 400 gcooked beans
  • 1onion
  • 80 mlolive oil
  • 2 tbspvinegar
  • parsley — chopped
  • to tastefine sea salt

Method

  1. Start by finely dicing 1 onion. The pieces should be small enough to blend well with the beans but not so fine that they lose their texture. This will ensure that the onion flavor is present in every bite without overpowering the salad.
  2. In a large mixing bowl, combine 400 g of cooked beans with the diced onion. Use a bowl that allows you to mix the ingredients without spilling, ensuring even distribution of flavors.
  3. Drizzle 80 ml of olive oil over the beans and onion mixture. The oil should coat the beans lightly, adding richness and helping the other flavors meld together.
  4. Add 2 tablespoons of vinegar to the bowl. The vinegar will provide a tangy contrast to the richness of the olive oil, balancing the flavors. Stir gently to ensure the vinegar is evenly distributed.
  5. Season the salad with fine sea salt to taste. Start with a small amount, mix, and taste, adding more if needed. The salt should enhance the natural flavors without making the salad overly salty.
  6. Chop a handful of fresh parsley and add it to the salad. The parsley will add a fresh, herbal note and a pop of color. Toss gently to combine, being careful not to break the beans.
  7. Serve the Pakistani Bean Salad immediately with fresh bread. The salad is best enjoyed fresh, with the flavors vibrant and the textures distinct.
