Pakistani Cucumber Salad 3

Serves 4 to 6 Salad vegetarian, Salads

Pakistani Cucumber Salad 3

Pakistani Cucumber Salad 3 is a staple on the tables of Karachi, Lahore, Peshawar, and Islamabad, reflecting the casual elegance of everyday home cooking. This version captures the essence of how family cooks prepare it, with salt measured by intuition and a generous hand with fat. It’s a dish that finds its place at meals meant for sharing, offering a refreshing counterpoint to spicier mains.

Expect a cool, creamy texture from the yogurt that wraps around crisp cucumber slices, accented by the gentle warmth of garlic and the aromatic whisper of dill. The salt enhances these familiar flavors, creating a harmonious balance that invites second helpings.

Ingredients

  • 2cucumbers
  • 200 gyogurt
  • 1 clovegarlic
  • dill — chopped
  • to tastefine sea salt

Method

  1. Start by peeling the 2 cucumbers and slicing them into thin rounds, about 1/4 inch thick. This thickness ensures they retain a slight crunch while absorbing the flavors. Place the cucumber slices in a large mixing bowl and set aside.
  2. In a small bowl, combine 200 g of yogurt with a finely minced clove of garlic. The garlic should be minced as finely as possible to evenly distribute its flavor throughout the yogurt. Add a generous pinch of fine sea salt to the yogurt mixture, stirring until smooth and well combined.
  3. Chop a handful of fresh dill finely, and add it to the yogurt mixture. The dill should be finely chopped to release its aroma and blend seamlessly with the yogurt. Stir the dill into the yogurt until the mixture is fragrant and evenly mixed.
  4. Pour the yogurt dressing over the cucumber slices in the mixing bowl. Use a large spoon to gently toss the cucumbers with the dressing, ensuring each slice is well coated. Be gentle to maintain the integrity of the cucumber slices.
  5. Taste the salad and adjust the seasoning with more fine sea salt if needed, keeping in mind that the flavors will continue to meld as the salad sits. The salt should enhance the flavors without overpowering the freshness of the cucumbers and dill.
  6. Transfer the salad to a serving dish and garnish with a few sprigs of dill for a fresh touch. Serve the salad immediately with warm bread on the side, allowing diners to scoop and savor the refreshing flavors.
