Pakistani Tomato Salad 2

Pakistani Tomato Salad 2 is a vibrant staple that graces tables across Karachi, Lahore, Peshawar, and Islamabad. It's a dish that embodies the essence of everyday dining, crafted with care in the heart of Pakistani homes. Here, salt is not measured but felt, and olive oil is poured with generosity—a reflection of the hospitable spirit of these bustling cities. This recipe captures the unpretentious simplicity of a home kitchen, where family cooks create with instinct rather than instruction.

The salad bursts with the fresh sweetness of ripe tomatoes, the cool crunch of cucumber, and the bright zing of lemon. Each bite is a harmonious blend of textures, lifted by aromatic herbs and balanced by a delicate sprinkle of fine sea salt. It's a dish meant for sharing, inviting those gathered to savor its simplicity and the warmth it brings to the table.

Ingredients

  • 3tomatoes
  • 1cucumber
  • 80 mlolive oil
  • lemonjuiced
  • herbs — chopped
  • to tastefine sea salt

Method

  1. Start by washing 3 tomatoes and 1 cucumber thoroughly under cold running water to remove any dirt. Pat them dry with a clean kitchen towel. Slice the tomatoes into thin wedges and the cucumber into half-moon slices. Aim for uniform thickness so they mix well and look appealing.
  2. Place the sliced tomatoes and cucumber into a large mixing bowl. Ensure the bowl is large enough to allow for easy tossing without spilling.
  3. In a small bowl, combine 80 ml of olive oil, the juice of one lemon, and fine sea salt to taste. Whisk these ingredients together until the salt is dissolved and the mixture is emulsified, forming a smooth dressing. The dressing should have a balanced tangy and salty flavor.
  4. Pour the dressing over the tomatoes and cucumber in the large mixing bowl. Use a gentle folding motion with a large spoon or salad tongs to coat the vegetables evenly. Be careful not to break the tomato wedges as you mix.
  5. Finely chop your choice of fresh herbs, such as cilantro or mint, and sprinkle them over the salad. The herbs should be fresh and fragrant, adding a burst of flavor and color to the dish.
  6. Give the salad one final gentle toss to incorporate the herbs without bruising them. The salad should look vibrant and glossy, with each piece lightly coated in the dressing.
  7. Transfer the salad to a serving platter or bowl. Serve immediately with fresh bread on the side, allowing the flavors to be enjoyed at their peak freshness.
