Ingredients

Method

  1. Preheat your oven to 375°F (190°C). Slice the log of fresh goat cheese into four equal rounds. Place each round on a slice of baguette and arrange them on a baking sheet lined with parchment paper. Bake in the oven until the cheese is soft and slightly golden on top, about 8-10 minutes. The cheese should be warm and creamy, with a gentle ooze over the edges of the baguette.
  2. While the cheese is baking, prepare the dressing. In a small bowl, combine 3 tablespoons of walnut oil, 1 tablespoon of sherry or red wine vinegar, and 1 teaspoon of honey. Whisk the mixture vigorously until it emulsifies and the honey is fully dissolved. Taste and season with fine salt and black pepper to your preference, ensuring the dressing has a balanced sweet and tangy flavor.
  3. In a large salad bowl, place 4 cups of mixed salad greens. Drizzle a small amount of the dressing over the greens, and gently toss with your hands or salad tongs. Be careful not to bruise the leaves; they should remain crisp and vibrant.
  4. Once the cheese and baguette slices are ready, remove them from the oven and let them cool slightly for a minute or two. This ensures they are warm but not too hot to handle or eat.
  5. Arrange the dressed salad greens on individual plates or a large serving platter. Place one slice of the warm chèvre-topped baguette on top of each serving of greens. Drizzle a little more dressing over the top if desired, ensuring each bite has a touch of the walnut oil's richness.
