Vietnamese Tomato Salad 2

Serves 4 to 6 Salad vegetarian, Salads

Vietnamese Tomato Salad 2

Vietnamese Tomato Salad 2 is a vibrant testament to home cooking in Vietnam, where the simplicity of fresh ingredients meets the intuitive touch of a family cook. Salt is judged by hand, not by measure, allowing each dish to reflect the cook's personal taste. This dish graces tables as a refreshing side, ideal for sharing during a casual family meal or a gathering with friends.

The salad offers a burst of flavors, combining the juiciness of ripe tomatoes with the cool crunch of cucumber. Generous olive oil enriches the mix, while a squeeze of lemon juice brightens the palate. Delicate herbs add a fragrant finish, making each bite a delightful balance of freshness and richness.

Ingredients

  • 3tomatoes
  • 1cucumber
  • 80 mlolive oil
  • lemonjuiced
  • herbs — chopped
  • to tastefine sea salt

Method

  1. Start by washing 3 tomatoes and 1 cucumber thoroughly under cold running water. Pat them dry with a clean kitchen towel. Slice the tomatoes into thin wedges and the cucumber into thin rounds. Arrange them in a large mixing bowl, ensuring the slices are evenly distributed.
  2. In a small bowl, combine 80 ml of olive oil with the juice of one lemon. Whisk them together until they form a smooth, emulsified dressing. This will ensure the oil and lemon juice coat the vegetables evenly, enhancing their flavors.
  3. Pour the dressing over the sliced tomatoes and cucumber in the mixing bowl. Sprinkle fine sea salt to taste over the salad. The salt should be added gradually, tasting as you go, to ensure the flavors are balanced and not overly salty.
  4. Gently toss the salad using a large spoon or your hands. Be careful to keep the tomato wedges and cucumber rounds intact to maintain the salad's texture and appearance. The goal is to coat each piece lightly with the dressing without mashing the vegetables.
  5. Chop a handful of fresh herbs such as cilantro or mint, and sprinkle them over the salad. The herbs should be fresh and fragrant, adding a burst of color and flavor to the dish.
  6. Serve the Vietnamese Tomato Salad 2 immediately, accompanied by slices of crusty bread. The freshness of the salad pairs well with the bread, making it perfect for scooping up the flavorful juices at the bottom of the bowl.
