Ingredients

  • 400 gcooked beans
  • 1onion
  • 80 mlolive oil
  • 2 tbspvinegar
  • parsley — chopped

  1. Begin by finely chopping 1 onion. The pieces should be small enough to blend well with the beans but not so fine that they lose their crunch. This will add a crisp texture to the salad. Set the chopped onion aside.
  2. Rinse 400 g of cooked beans under cold water to refresh them and remove any excess starch. Drain thoroughly to ensure the salad isn't watery. This step helps the beans maintain their firmness and enhances their flavor.
  3. In a large mixing bowl, combine the drained beans with the chopped onion. Use a bowl large enough to allow for gentle tossing without spilling.
  4. Drizzle 80 ml of olive oil over the bean and onion mixture. Follow with 2 tablespoons of vinegar. The olive oil adds richness, while the vinegar provides a tangy contrast that brightens the dish.
  5. Season the salad with fine sea salt to taste. Start with a small amount, then adjust as needed. The salt should enhance the flavors without overpowering them.
