West African Tomato Salad 3

West African Tomato Salad 3 is a staple on home tables, crafted with the intuitive touch of the cook. This dish captures the essence of West African home cooking, where the salt is judged by hand and the olive oil flows generously. It’s often enjoyed as part of a shared meal, bringing freshness and vibrancy to the table, much like the conversations that accompany it.

Expect a crisp bite from the cucumber, balanced by the juicy sweetness of ripe tomatoes. The olive oil adds a silky richness, while a squeeze of lemon delivers a bright tang. Herbs weave through, offering fragrant notes that elevate each bite. This salad invites you to taste the simplicity and generosity of West African home cooking.

Ingredients

  • 3tomatoes
  • 1cucumber
  • 80 mlolive oil
  • lemonjuiced
  • herbs — chopped
  • to tastefine sea salt

Method

  1. Start by washing the 3 tomatoes and the cucumber thoroughly under cold running water to remove any dirt. Pat them dry with a clean kitchen towel. Slice the tomatoes into thin wedges and the cucumber into thin rounds, ensuring all pieces are of uniform thickness for even flavor distribution.
  2. Place the sliced tomatoes and cucumber into a large mixing bowl. This will allow you to toss the salad without spilling. Ensure the bowl is large enough to accommodate all ingredients comfortably, giving you room to mix without crushing the vegetables.
  3. In a small bowl, combine 80 ml of olive oil with the juice of one lemon. Whisk them together until the mixture appears slightly cloudy and emulsified. This will create a balanced dressing that coats the vegetables evenly.
  4. Pour the olive oil and lemon dressing over the tomatoes and cucumber in the mixing bowl. Sprinkle fine sea salt to taste over the top. The salt should enhance the natural flavors of the vegetables without overpowering them.
  5. Add your choice of fresh herbs to the salad. Consider using herbs like parsley, cilantro, or basil, which complement the flavors well. Tear the herbs gently with your hands to release their aroma and flavor before adding them to the bowl.
  6. Using a large spoon, gently toss the salad to combine all ingredients. Be careful to keep the tomato wedges and cucumber rounds intact, as their texture is a key element of the dish. The salad should look vibrant and glossy, with each piece lightly coated in the dressing.
  7. Serve the West African Tomato Salad 3 immediately. Transfer it to a serving platter or individual plates. This salad is best enjoyed fresh, accompanied by crusty bread to soak up the flavorful dressing.
