Caribbean Potato Side 2

Caribbean Potato Side 2

Caribbean Potato Side 2 captures the essence of home cooking across the islands, where the dish is as much a staple as it is a gesture of hospitality. Traditionally served alongside hearty mains or grilled seafood, it finds its place on the table during family gatherings or casual weeknight dinners. The recipe reflects the intuitive approach of Caribbean home cooks, with salt measured by instinct and oil lavishly applied.

Expect each bite to be a harmonious blend of tender, earthy potatoes and the subtle warmth of paprika. The generous use of oil ensures a satisfying richness, while the paprika adds a hint of smokiness. The result is a side dish that complements any main course with its comforting simplicity and bold, familiar flavors.

Ingredients

  • 1 kgpotatoes
  • 80 mloil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Peel 1 kg of potatoes and cut them into evenly sized cubes, about 2 cm each. This uniform size ensures that they cook at the same rate, giving you a consistent texture throughout the dish.
  2. Heat 80 ml of oil in a large, deep skillet over medium heat. You want enough oil to coat the bottom of the pan generously, which will help the potatoes cook evenly without sticking.
  3. Add 1 finely chopped onion to the skillet and sauté until the onion becomes soft and translucent. Stir occasionally to prevent the onion from browning too quickly, as you want it to release its sweetness into the oil.
  4. Add the cubed potatoes to the skillet with the softened onions. Stir to coat the potatoes in the flavored oil, ensuring each piece gets a touch of the onion-infused oil.
  5. Sprinkle 1 tsp of paprika over the potatoes and stir well to distribute the spice evenly. The paprika will add a warm color and a subtle depth of flavor to the dish.
  6. Continue to cook the potatoes, stirring occasionally, until they become tender and can be easily pierced with a fork. The edges should be slightly crisp and golden, indicating they are perfectly cooked.
  7. Season the potatoes with fine sea salt and black pepper to taste. Stir to combine, allowing the seasoning to meld with the potatoes.
  8. Serve the Caribbean Potato Side 2 warm, directly from the skillet or transferred to a serving dish, ready for sharing around the table.
