Caribbean Potato Side

Caribbean Potato Side is a dish deeply rooted in the everyday life of Caribbean households. It is not tied to grand occasions or holidays but finds its place at the table during regular family meals. The recipe is an authentic reflection of how Caribbean home cooks prepare it, with a straightforward approach that prioritizes taste and comfort over elaborate presentation.

The dish offers a satisfying blend of tender potatoes infused with a generous amount of oil and a hint of paprika, creating a warm, earthy aroma. The seasoning is adjusted by hand, allowing each cook to impart their personal touch, while the rich flavors are meant to be savored and shared among family and friends.

Ingredients

  • 1 kgpotatoes
  • 80 mloil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Begin by peeling 1 kg of potatoes and cutting them into even-sized cubes, about 1-inch each. Uniform pieces ensure that the potatoes cook evenly and absorb flavors consistently.
  2. In a large, heavy-bottomed skillet or pot, heat 80 ml of oil over medium heat. The oil should shimmer slightly, indicating it's hot enough to start cooking.
  3. Add the potatoes to the hot oil, stirring to coat them evenly. Cook for about 5 minutes, stirring occasionally, until the potatoes start to develop a light golden color on the edges. This initial browning adds depth to the flavor.
  4. Sprinkle 1 tsp of paprika over the potatoes, stirring well to distribute the spice evenly. The paprika will give the potatoes a warm, earthy aroma and a vibrant color.
  5. Reduce the heat to low and cover the skillet with a lid. Allow the potatoes to cook gently, stirring occasionally, until they are tender and can be easily pierced with a fork. The potatoes should be soft but not falling apart, with a rich, infused flavor.
  6. Once the potatoes are tender, season them with fine sea salt and black pepper to taste. Stir well to ensure the seasoning is evenly distributed, adjusting to your preference.
  7. Serve the Caribbean Potato Side warm, allowing the flavors to shine. This dish is best enjoyed as part of a shared meal, embodying the spirit of Caribbean home cooking.
