Ingredients

  • 400 grice
  • 50 gbutter or oil
  • 600 mlwater
  • 1 tspfine sea salt

Method

  1. Begin by preparing your vegetables. Chop them evenly to ensure they cook at the same rate, aiming for small, uniform pieces. This will help them soften consistently and blend well with the rice.
  2. In a large, heavy-bottomed pot, melt 50 g of butter or heat the same amount of oil over medium heat. Add the chopped onion to the pot, stirring occasionally. Cook until the onion becomes translucent and soft, releasing its sweet aroma.
  3. Add 400 g of rice to the pot with the softened onion. Stir the rice gently to coat each grain with the butter or oil, allowing it to absorb the flavors and begin to toast slightly. This step enhances the nutty flavor of the rice.
  4. Pour in 600 ml of water into the pot and add 1 tsp of fine sea salt. Stir gently to combine, ensuring the salt dissolves evenly in the water. Bring the mixture to a gentle simmer.
  5. Once simmering, reduce the heat to low and cover the pot with a tight-fitting lid. Allow the rice to cook undisturbed until it absorbs all the water and becomes tender. The rice should be fluffy, with each grain separate and tender to the bite.
  6. Remove the pot from the heat and let it sit, covered, for a few minutes. This resting period allows the rice to finish steaming and ensures a light, airy texture.
  7. Fluff the rice gently with a fork to separate the grains. Taste and adjust the seasoning if necessary, adding a little more salt if desired. Serve the Caribbean Rice Side 2 warm, inviting everyone to share in this comforting dish.
