Ingredients

  • 1 kgpotatoes
  • 80 mloil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Peel 1 kg of potatoes and cut them into thin, even matchsticks, about 1/8 inch thick. This ensures they cook evenly and absorb flavors well. Rinse the cut potatoes in cold water to remove excess starch, then drain thoroughly.
  2. Heat 80 ml of oil in a large wok or deep skillet over medium-high heat. The oil should be hot but not smoking, which helps the potatoes cook evenly without burning.
  3. Add the potatoes to the hot oil. Stir frequently to coat them evenly with oil and prevent sticking. Cook until the potatoes start to become tender and slightly translucent, about 5-7 minutes.
  4. Sprinkle 1 tsp of paprika over the potatoes, stirring well to distribute the spice evenly. This will add a subtle warmth and color to the dish.
  5. Continue cooking the potatoes until they are tender but still have a slight bite, about 3-5 more minutes. Taste a piece to ensure it has the right texture—soft on the outside with a slight firmness inside.
  6. Season the potatoes with fine sea salt and black pepper to taste, stirring to combine. Adjust the seasoning based on your preference, keeping in mind that the dish should be savory but not overly salty.
  7. Transfer the potatoes to a serving dish and serve warm, allowing the flavors to meld as they cool slightly. This dish is best enjoyed as part of a shared meal, embodying the communal spirit of Chinese home cooking.
