Method

  1. Peel and cut 1 kg of potatoes into even-sized cubes, about 2 cm each. This ensures they cook evenly and absorb the flavors uniformly.
  2. In a large skillet or heavy-bottomed pot, heat 80 ml of oil over medium heat. The oil should be hot but not smoking, ready to soften the onions.
  3. Add 1 finely chopped onion to the hot oil. Cook, stirring occasionally, until the onion becomes translucent and soft, releasing a sweet aroma, about 5-7 minutes.
  4. Add the cubed potatoes to the skillet with the softened onions. Stir well to coat the potatoes in the oil and onion mixture, ensuring each piece is covered.
  5. Sprinkle 1 tsp of paprika over the potatoes, stirring to evenly distribute the spice. This will give the potatoes a warm color and a subtle smoky flavor.
  6. Continue to cook the potatoes, stirring occasionally, until they are tender and can be easily pierced with a fork. The edges should be slightly crisp and golden brown.
  7. Season the potatoes generously with fine sea salt and black pepper to taste. Taste a piece to ensure the seasoning is to your liking, adjusting as needed.
