Ingredients

  • 400 grice
  • 50 gbutter or oil
  • 600 mlwater
  • 1 tspfine sea salt

Method

  1. Begin by preparing your vegetables. Chop one medium onion finely, ensuring the pieces are uniform in size so they cook evenly. This will help them soften at the same rate, ensuring a consistent texture throughout the dish.
  2. In a large, heavy-bottomed pot, add 50 g of butter or oil and heat over medium heat. Once the butter has melted or the oil is shimmering, add the chopped onion. Stir occasionally, cooking until the onion becomes translucent and soft, releasing a sweet aroma. This should take about 5 to 7 minutes.
  3. Add 400 g of rice to the pot with the softened onions. Stir well to coat the rice grains in the butter or oil, allowing them to absorb the flavors from the onion. This step helps toasting the rice slightly, enhancing its nutty flavor.
  4. Pour in 600 ml of water, ensuring all the rice is submerged. Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot with a tight-fitting lid. This gentle simmer will allow the rice to cook evenly without burning.
  5. Let the rice cook undisturbed until all the water is absorbed. You can check for doneness by tilting the pot slightly; if no water pools at the bottom, the rice is ready. The grains should be tender with a slight bite, and the texture should be fluffy.
  6. Remove the pot from heat and let it sit, covered, for an additional 5 minutes. This resting period allows the rice to finish steaming, ensuring each grain is perfectly cooked.
  7. Season the rice with 1 tsp of fine sea salt, gently fluffing with a fork to distribute the seasoning evenly. Taste and adjust the salt if necessary, keeping in mind the traditional Colombian preference for a well-seasoned dish.
