Ingredients

  • 1 kgpotatoes
  • 80 mloil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Peel 1 kg of potatoes and cut them into even-sized cubes, about 2 cm each. This ensures they cook at the same rate, resulting in a uniform texture throughout the dish.
  2. In a large, heavy-bottomed skillet or pot, heat 80 ml of oil over medium heat. The oil should shimmer slightly when it's hot enough, but not smoke.
  3. Add the potatoes to the hot oil. Stir them occasionally to ensure they are coated evenly with the oil and begin to cook evenly.
  4. Sprinkle 1 tsp of paprika over the potatoes, stirring well to coat each piece. The paprika will add a warm, earthy flavor and a rich color to the potatoes.
  5. Continue to cook the potatoes, stirring occasionally, until they are tender and have developed a golden-brown crust on the outside. This should take about 15-20 minutes, but check for doneness by piercing a potato cube with a fork; it should slide in easily.
  6. Season the potatoes with fine sea salt and black pepper to taste. Stir well to distribute the seasoning evenly throughout the dish.
  7. Serve the potatoes warm, as they are traditionally enjoyed at Eastern European family tables. The dish should be fragrant with paprika and have a satisfying, crispy texture on the outside with a soft interior.
