It's traditionally served alongside hearty mains, especially during family dinners where the focus is on warmth and togetherness rather than elaborate presentation.

The rice, cooked with a generous hand of butter or oil, achieves a delicate balance of savory richness and subtle saltiness, offering a creamy texture that complements any main course. Each grain is tender, absorbing the flavors of the butter or oil, making it a perfect partner for robust meats or stews. This dish embodies the unpretentious heart of Eastern European home cooking.

Ingredients

  • 400 grice
  • 50 gbutter or oil
  • 600 mlwater
  • 1 tspfine sea salt

Method

  1. Start by preparing your vegetables. Choose vegetables that are commonly used in Eastern European cuisine, such as carrots, bell peppers, or peas. Dice them evenly into small pieces, about the size of a pea, to ensure they cook at the same rate. Set them aside for later use.
  2. In a large, heavy-bottomed pot, melt 50 g of butter or heat an equivalent amount of oil over medium heat. Once the butter has melted or the oil is shimmering, add finely chopped onions. Stir occasionally and cook the onions until they become translucent and soft, which should take about 5-7 minutes. This will form the aromatic base of your dish.
  3. Add the diced vegetables to the pot with the onions. Stir them gently to coat them in the butter or oil. Cook the vegetables until they are tender, which means they should be soft but still hold their shape. This usually takes another 5-7 minutes.
  4. Add 400 g of rice to the pot, stirring to combine it with the vegetables. Allow the rice to cook for about 2 minutes, stirring occasionally. This will help to lightly toast the rice, enhancing its flavor.
  5. Pour in 600 ml of water and add 1 tsp of fine sea salt. Stir everything together, ensuring the rice is evenly distributed in the pot. Increase the heat to bring the mixture to a gentle boil.
  6. Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer. Cook until the rice has absorbed all the water and is tender, which you can tell by tasting a grain; it should be soft with no hard center.
  7. Remove the pot from the heat and let it sit, covered, for about 5 minutes. This resting period allows the rice to finish cooking in its own steam, ensuring a fluffy texture.
  8. Fluff the rice gently with a fork to separate the grains. Taste and adjust the seasoning if necessary, adding more salt if desired. Serve the rice warm, ready to be shared at the table as a comforting Eastern European side dish.
