Ingredients

  • 400 grice
  • 50 gbutter or oil
  • 600 mlwater
  • 1 tspfine sea salt

Method

  1. Begin by finely chopping any vegetables you have chosen to include, ensuring they are cut into even pieces. This uniformity helps them cook at the same rate, preventing any from being undercooked or overly mushy.
  2. In a large, heavy-bottomed pot, melt 50 g of butter or heat an equal amount of oil over medium heat. Add the chopped vegetables, starting with onions if using, and sauté them until they become soft and translucent. This should take about 5 to 7 minutes, and the onions should appear glossy and slightly golden.
  3. Once the vegetables are soft, add 400 g of rice to the pot. Stir the rice gently to coat each grain with the butter or oil, which helps toasting the rice slightly and enhances its flavor.
  4. Pour in 600 ml of water and add 1 tsp of fine sea salt. Stir the mixture once to ensure the rice is evenly distributed and submerged in the liquid.
  5. Increase the heat to bring the pot to a gentle boil. Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer. Cook until the rice has absorbed all the water and is tender, which you can tell by tasting a few grains to ensure they are soft and fully cooked.
  6. Once the rice is tender, remove the pot from the heat and let it sit, covered, for about 5 minutes. This resting period allows the rice to firm up slightly and makes it easier to fluff.
  7. Gently fluff the rice with a fork to separate the grains, being careful not to mash them. Taste and adjust the seasoning with more salt if needed.
  8. Serve the Eastern European Rice Side warm, offering it as a comforting and hearty accompaniment to your meal, embodying the spirit of Eastern European home cooking.
