Filipino Potato Side 2

Filipino Potato Side 2 is a beloved staple found on many home tables across the Philippines, often served during family dinners and weekend gatherings. This dish reflects the Filipino approach to cooking, where recipes are passed down through generations and adapted to the tastes of each household. It’s a dish that embodies the simplicity and warmth of a home-cooked meal, made with ingredients that are always within reach.

The potatoes are cooked until tender, with a rich coating of oil that enhances their natural creaminess. A touch of paprika adds a gentle warmth, while salt and pepper are applied with the practiced hand of a seasoned cook. Each bite is a comforting balance of flavors, inviting you to savor the heartiness of the dish. It’s meant to be shared, encouraging everyone at the table to indulge in its simple, yet satisfying taste.

Ingredients

  • 1 kgpotatoes
  • 80 mloil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Peel 1 kg of potatoes and cut them into even-sized cubes, roughly 1 inch each. This ensures they cook at the same rate and absorb flavors uniformly.
  2. In a large, heavy-bottomed skillet or wok, heat 80 ml of oil over medium heat. Once the oil is shimmering, add the potatoes, spreading them out in a single layer to ensure even cooking.
  3. Sprinkle 1 tsp of paprika over the potatoes, stirring gently to coat them evenly. The paprika will add a warm color and a subtle smoky flavor to the dish.
  4. Continue cooking the potatoes, stirring occasionally, until they become tender and develop a golden-brown crust on the outside. This should take about 15-20 minutes, depending on the size of your potato cubes.
  5. Once the potatoes are tender, season them generously with fine sea salt and black pepper to taste. Toss the potatoes gently to ensure the seasoning is evenly distributed.
  6. Serve the Filipino Potato Side 2 warm, allowing the flavors to meld together. This dish is best enjoyed immediately, as the warmth enhances the savory and smoky notes.
