Ingredients

  • 1 kgpotatoes
  • 80 mloil
  • 1 tsppaprika

Method

  1. Peel and cut 1 kg of potatoes into even-sized cubes, about 1-inch each. This ensures they cook evenly and at the same rate, preventing any pieces from being undercooked while others are overdone.
  2. Heat 80 ml of oil in a large skillet over medium heat. The oil should be hot but not smoking, which will help the potatoes cook evenly and develop a nice golden crust.
  3. Add the potato cubes to the skillet, spreading them out in a single layer. Stir occasionally to ensure even cooking and prevent sticking. Cook until the potatoes start to turn golden brown on the edges, about 10 minutes.
  4. Sprinkle 1 tsp of paprika over the potatoes, stirring well to coat them evenly. The paprika adds a subtle smokiness and enhances the color of the dish.
  5. Continue cooking the potatoes, stirring occasionally, until they are tender and can be easily pierced with a fork. This should take an additional 10-15 minutes. The potatoes should be golden and crispy on the outside, with a soft interior.
  6. Season the potatoes with fine sea salt and black pepper to taste. Toss them gently to distribute the seasoning evenly.
  7. Serve the Filipino Potato Side warm, ensuring the potatoes are still crisp on the outside. This dish is perfect for sharing, embodying the communal spirit of a Filipino meal.
