Filipino Rice Side 2

Filipino Rice Side 2 embodies the everyday simplicity and warmth of a Filipino home. It's a dish that finds its place on the table during any meal, from breakfast to dinner, serving as a constant companion to a variety of main dishes. The recipe reflects the intuitive cooking style passed down through generations, where salt is measured by feel and fat is embraced without hesitation.

The taste is subtly rich, with the butter or oil infusing the rice grains, creating a comforting, velvety texture. The salt enhances the natural flavors, resulting in a dish that is both satisfying and humble. Perfectly cooked rice, with each grain distinct yet tender, invites you to share in the comforting rituals of Filipino dining.

Ingredients

  • 400 grice
  • 50 gbutter or oil
  • 600 mlwater
  • 1 tspfine sea salt

Method

  1. Rinse 400 g of rice under cold running water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky during cooking.
  2. In a medium-sized pot, melt 50 g of butter or heat the same amount of oil over medium heat. Add finely chopped onions and sauté until they become soft and translucent, which should take about 3 to 4 minutes. The onions should release a sweet aroma, indicating they are ready.
  3. Add the rinsed rice to the pot with the onions. Stir the rice gently to coat each grain with the butter or oil, allowing it to absorb the flavors from the onions.
  4. Pour 600 ml of water into the pot and add 1 tsp of fine sea salt. Stir once to ensure the salt is evenly distributed, then increase the heat to bring the mixture to a gentle boil.
  5. Once boiling, reduce the heat to low and cover the pot with a tight-fitting lid. Let the rice cook undisturbed until all the water is absorbed and the rice is tender, which you can tell by tasting a few grains. The rice should be soft but not mushy.
  6. Remove the pot from the heat and let it sit, covered, for about 5 minutes. This resting period allows the rice to finish cooking in its own steam, ensuring it is fluffy and evenly cooked.
  7. Fluff the rice gently with a fork to separate the grains. Taste and adjust the seasoning if necessary, then serve the rice warm as a side dish.
