Ingredients

  • 3ripe plantains — sliced
  • 80 mlvegetable oil
  • 1/2 tspfine sea salt

Method

  1. Begin by peeling the 3 ripe plantains. Slice them into even rounds, approximately 1/2 inch thick. This uniform size ensures that each piece cooks at the same rate, giving you a consistent texture and flavor throughout.
  2. In a large, heavy-bottomed skillet, pour in 80 ml of vegetable oil. Heat the oil over medium-high heat until it shimmers. This indicates that the oil is hot enough to start cooking the plantains without them absorbing too much oil.
  3. Carefully add the plantain slices to the hot oil in a single layer, ensuring they do not overlap. This allows each slice to fry evenly. You may need to cook them in batches depending on the size of your skillet.
  4. Fry the plantains for about 2 to 3 minutes on each side. Look for a deep golden brown color on the edges and a slightly caramelized surface. This color indicates that they are tender inside and have developed a sweet, rich flavor.
  5. Once the plantains are golden and tender, use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels. This step helps to drain any excess oil, keeping them crispy.
  6. While the plantains are still warm, sprinkle them with 1/2 tsp of fine sea salt. Toss gently to ensure even seasoning. Serve the plantains warm, enjoying their sweet and savory balance as a perfect side dish.
