Ingredients

  • 1 kgpotatoes
  • 80 mloil
  • 1 tsppaprika

Method

  1. Begin by peeling 1 kg of potatoes. Cut them into even-sized cubes, approximately 1.5 cm each, to ensure they cook uniformly. This size helps the potatoes cook through without becoming mushy on the outside.
  2. In a large, heavy-bottomed skillet or wok, heat 80 ml of oil over medium heat. The oil should be hot but not smoking, which allows the potatoes to cook evenly without burning.
  3. Add the potato cubes to the skillet, spreading them out in a single layer. Stir occasionally to coat them evenly with oil. Cook for about 10 minutes, or until the potatoes start to turn golden brown on the edges.
  4. Sprinkle 1 tsp of paprika over the potatoes, stirring well to distribute the spice evenly. The paprika will add a warm color and a subtle smoky flavor to the dish.
  5. Continue cooking the potatoes, stirring occasionally, until they are tender when pierced with a fork and have a crispy exterior. This should take an additional 5-10 minutes, depending on the size of your potato pieces.
  6. Once the potatoes are cooked to your desired tenderness, season them with fine sea salt and black pepper to taste. Toss them gently to ensure the seasoning is evenly distributed.
  7. Serve the Indonesian Potato Side warm, ideally as part of a shared meal. The potatoes should have a crispy exterior with a soft, fluffy interior, making them a comforting addition to any table.
