Japanese Rice Side

Japanese Rice Side is a staple of home cooking, a dish that graces tables across Japan with comforting regularity. It is not bound to any specific celebration or season, but rather, it is a quiet hero of the everyday meal. Prepared with a careful balance of salt and a generous touch of butter or oil, this rice reflects the intuitive artistry of Japanese family cooks who season by hand and cook with heart.

Ingredients

  • 400 grice
  • 50 gbutter or oil
  • 600 mlwater
  • 1 tspfine sea salt

Method

  1. Rinse 400 g of rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky during cooking.
  2. In a medium-sized pot, melt 50 g of butter over medium heat. If using oil, heat it until it shimmers. Add finely chopped onion and sauté until the onion becomes translucent and soft, releasing a sweet aroma.
  3. Add the rinsed rice to the pot with the onions. Stir well to coat each grain with the butter or oil, which will help toasting the rice slightly and enhancing its flavor.
  4. Pour 600 ml of water into the pot and add 1 tsp of fine sea salt. Stir gently to combine, ensuring the salt is evenly distributed.
  5. Increase the heat to high and bring the water to a boil. Once boiling, reduce the heat to low and cover the pot with a tight-fitting lid. Allow the rice to simmer gently.
  6. Cook the rice until all the water is absorbed and the grains are tender, about 15-20 minutes. You will know it's done when small steam holes appear on the surface and the rice is fluffy.
  7. Remove the pot from the heat and let it sit, covered, for an additional 5 minutes. This resting period allows the rice to finish cooking and absorb any remaining moisture.
  8. Fluff the rice gently with a fork to separate the grains before serving. Taste and adjust the seasoning with more salt if necessary, then serve the rice warm, ready to be shared at the table.
