It is a staple that accompanies a myriad of meals, offering a comforting and familiar presence. This version captures the essence of everyday cooking, where ingredients are measured by intuition and experience rather than precision, and where the dish is crafted with care and a generous hand.

The result is a fluffy, tender rice that is rich with the subtle creaminess of butter or oil and perfectly seasoned with a pinch of sea salt. Each grain stands alone yet harmonizes with the rest, creating a simple yet deeply satisfying side dish. It is meant to be shared, a quiet companion to more elaborate dishes, allowing their flavors to shine while providing a soothing backdrop.

Ingredients

  • 400 grice
  • 50 gbutter or oil
  • 600 mlwater
  • 1 tspfine sea salt

Method

  1. Begin by preparing your vegetables. Choose vegetables like carrots, bell peppers, or zucchini, and cut them into evenly sized small cubes, about 1 cm each. This ensures they cook at the same rate and blend well with the rice.
  2. In a large, heavy-bottomed pot, melt 50 g of butter or heat an equivalent amount of oil over medium heat. Add a finely chopped onion and sauté until it becomes soft and translucent, which should take about 5-7 minutes. The onion should release a sweet aroma and become slightly golden.
  3. Add the cubed vegetables to the pot with the softened onion. Stir them occasionally, allowing them to cook until they are tender but still hold their shape, which will take about 5-8 minutes. The vegetables should be vibrant in color and have a slight bite to them.
  4. Rinse 400 g of rice under cold water until the water runs clear to remove excess starch. Drain well and add the rice to the pot, stirring to coat it in the butter or oil and mix with the vegetables. Toast the rice for about 2-3 minutes, until it starts to emit a nutty aroma.
  5. Pour 600 ml of water into the pot and add 1 tsp of fine sea salt. Stir gently to combine, then increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer.
  6. Cook the rice for about 15-20 minutes, or until the water is fully absorbed and the rice is tender. The rice should be fluffy and each grain should be separate. If you tilt the pot, there should be no excess water at the bottom.
  7. Once the rice is cooked, remove the pot from the heat and let it sit, covered, for an additional 5 minutes. This resting period allows the rice to finish cooking in its own steam, resulting in a perfect texture.
  8. Fluff the rice gently with a fork to mix in the vegetables evenly. Taste and adjust the seasoning if necessary, adding more salt if desired. Serve the rice warm, as part of a shared meal, embodying the spirit of Middle Eastern home cooking.
