Middle Eastern Rice Side is a staple at home tables across the region, arriving as a humble yet essential companion to a variety of main dishes. It reflects the simplicity and generosity found in home kitchens, where the rice is prepared to accompany anything from rich stews to grilled meats.

The dish should present itself as a tender, aromatic bed of rice, with the grains distinct yet softly bound by the embrace of butter or oil. The salt, judged by hand, enhances the natural flavor of the rice without overpowering it. It's a dish meant for sharing, inviting everyone at the table to serve themselves and enjoy its comforting presence.

Ingredients

  • 400 grice
  • 50 gbutter or oil
  • 600 mlwater
  • 1 tspfine sea salt

Method

  1. Begin by rinsing 400 g of rice under cold running water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky. Drain the rice thoroughly and set aside.
  2. In a large, heavy-bottomed pot, heat 50 g of butter or oil over medium heat. Add one finely chopped onion to the pot. Stir occasionally, cooking until the onion becomes soft and translucent, which should take about 5 to 7 minutes. This step enhances the flavor base of the dish.
  3. Add the rinsed and drained rice to the pot with the softened onions. Stir well to coat each grain with the butter or oil, allowing the rice to absorb the flavors. Toast the rice for about 2 minutes, stirring constantly, until you notice a nutty aroma.
  4. Pour 600 ml of water into the pot with the rice and onions. Add 1 tsp of fine sea salt, stirring to combine. Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer.
  5. Allow the rice to cook undisturbed for about 15 to 20 minutes, or until the water is fully absorbed and the rice is tender. You can check for doneness by tasting a few grains; they should be soft but not mushy.
  6. Once the rice is cooked, remove the pot from heat and let it sit, covered, for an additional 5 minutes. This resting period allows the rice to firm up and makes it easier to fluff.
  7. Gently fluff the rice with a fork to separate the grains. Taste and adjust the seasoning if necessary, adding a bit more salt if desired. Serve the Middle Eastern Rice Side warm, as a flavorful accompaniment to your meal.
