Ingredients

  • 1 kgpotatoes
  • 80 mloil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Peel 1 kg of potatoes and cut them into even-sized cubes, about 1.5 cm each, to ensure they cook uniformly. This will help them absorb the flavors evenly and cook at the same rate.
  2. In a large, heavy-bottomed skillet or pot, heat 80 ml of oil over medium heat. The oil should be hot enough that it shimmers but does not smoke.
  3. Add 1 finely chopped onion to the hot oil. Cook, stirring occasionally, until the onion becomes soft and translucent, about 5 to 7 minutes. This step is crucial as it forms the flavor base for the dish.
  4. Add the cubed potatoes to the skillet, stirring to coat them well with the oil and softened onions. Ensure each piece is covered with the oil-onion mixture for even cooking.
  5. Sprinkle 1 tsp of paprika over the potatoes, stirring well to distribute the spice evenly. The paprika will add a warm color and a subtle smokiness to the dish.
  6. Cover the skillet with a lid and let the potatoes cook on medium-low heat. Stir occasionally to prevent sticking. Cook until the potatoes are tender and can be easily pierced with a fork, which should take about 20 to 25 minutes.
  7. Once the potatoes are tender, season generously with fine sea salt and freshly ground black pepper to taste. Stir well to ensure the seasoning is evenly distributed.
