Persian Potato Side

Serves 4 to 6 Side vegetarian, Sides

Persian Potato Side

Persian Potato Side is a staple at Persian home tables, a dish passed down through generations with an intuitive approach to seasoning and texture. Cooked with a generous hand, it reflects the essence of everyday Persian cooking, where each home cook relies on instinct rather than precise measurements. This side dish is a comforting constant, easily adaptable to any meal shared among family and friends.

The potatoes should be tender yet firm, lightly crisped on the outside, with a warm, earthy flavor from the paprika. The subtle heat from the seasoning balances perfectly with the richness of the oil, creating a harmonious blend that complements a variety of main dishes. It's a humble yet essential accompaniment, embodying the shared simplicity of a Persian meal.

Ingredients

  • 1 kgpotatoes
  • 80 mloil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Peel and cut 1 kg of potatoes into even-sized cubes, about 1.5 cm each, to ensure they cook uniformly. This will help them absorb flavors evenly and cook at the same rate.
  2. In a large, heavy-bottomed skillet, heat 80 ml of oil over medium heat. The oil should be hot but not smoking, ensuring it is ready to soften the potatoes without burning them.
  3. Add the potato cubes to the skillet in a single layer. Stir them gently to coat each piece with oil, then spread them out evenly. Allow them to cook, stirring occasionally, until they begin to turn golden brown on the edges, which should take about 10 minutes.
  4. Sprinkle 1 tsp of paprika over the potatoes, stirring well to distribute the spice evenly. This will give the potatoes a warm, reddish hue and a subtle smoky flavor.
  5. Continue cooking the potatoes, stirring occasionally, until they are tender when pierced with a fork. They should have a crispy exterior and a soft interior, indicating they are perfectly cooked.
  6. Season the potatoes with fine sea salt and black pepper to taste. Stir well to ensure the seasoning is evenly distributed throughout the dish.
  7. Serve the Persian Potato Side warm, allowing the flavors to meld and the dish to complement other components of your meal. This dish is meant to be shared, embodying the communal spirit of Persian dining.
