Ingredients

Method

  1. Start by preparing the vegetables. Cut the eggplant into 1-inch cubes, the zucchini into half-moon slices about 1/4-inch thick, and the bell peppers into strips. Dice the onion finely and chop the tomatoes into medium chunks. Mince the garlic cloves. Uniform slicing ensures even cooking, which is crucial for the harmonious texture of Ratatouille Niçoise.
  2. Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot over medium heat. Add the eggplant cubes and a pinch of salt. Cook, stirring occasionally, until the eggplant is golden brown and tender, about 5 to 7 minutes. The eggplant should have a soft texture and a slightly caramelized exterior, which adds depth to the dish.
  3. Remove the eggplant from the pot and set aside. In the same pot, add another tablespoon of olive oil. Add the onion and cook until translucent and fragrant, about 3 minutes. Stir in the garlic and cook for another minute until it releases its aroma, being careful not to let it brown.
  4. Add the bell peppers to the pot with the onions and garlic. Cook for about 5 minutes until the peppers begin to soften and their colors become vibrant. This stage builds the base flavors and ensures the peppers are tender but still hold their shape.
  5. Stir in the zucchini slices and season with a pinch of salt and black pepper. Cook for another 5 minutes, allowing the zucchini to soften slightly while retaining a bit of bite. This step ensures the zucchini absorbs the flavors without becoming mushy.
  6. Return the eggplant to the pot and add the chopped tomatoes along with the thyme. Stir everything together gently to combine. Allow the mixture to simmer over low heat for 15 to 20 minutes, stirring occasionally, until the vegetables are fully tender and the tomatoes have broken down into a sauce. The Ratatouille should have a cohesive texture with each vegetable maintaining its identity.
  7. Taste and adjust the seasoning with more salt and pepper if needed. Let the Ratatouille rest for a few minutes off the heat to allow the flavors to meld. Serve it warm as a side dish, letting its vibrant colors and rich aroma invite everyone to the table.
