Saffron Rice

Saffron Rice, a staple of Persian cuisine, is a dish that transforms simple ingredients into a feast for the senses. It's traditionally prepared in homes where the art of cooking rice is passed down through generations. This version captures the essence of those rice ceremonies, where salt is measured by instinct and fat is embraced without restraint, creating a dish meant to be shared around a communal table.

The result is a fragrant, golden-hued rice that delights with its delicate saffron aroma and buttery richness. Each grain remains distinct yet tender, offering a luxurious mouthfeel that complements the vibrant color. This dish stands on its own, inviting everyone to savor its elegant simplicity.

Ingredients

  • 400 gbasmati rice
  • 1/2 tspsaffron threads
  • 3 tbsphot water
  • 2 tbspbutter
  • 1 tbspvegetable oil
  • 1 tspfine sea salt

Method

  1. Rinse 400 g of basmati rice under cold water until the water runs clear to remove excess starch. This helps achieve fluffy rice with separate grains, a hallmark of Persian rice dishes.
  2. In a small bowl, crush 1/2 tsp saffron threads with the back of a spoon to release their aroma and color. Add 3 tbsp of hot water to the saffron and let it steep, allowing the vibrant color and flavor to infuse the water.
  3. In a large, heavy-bottomed pot, melt 2 tbsp butter with 1 tbsp vegetable oil over medium heat. This combination of fats will help create a rich flavor and prevent the rice from sticking.
  4. Add the rinsed rice to the pot, stirring gently to coat each grain with the butter and oil. This step ensures that the rice absorbs the flavors evenly and begins to toast slightly, enhancing its nutty aroma.
  5. Pour in enough water to cover the rice by about 2 cm, then add 1 tsp fine sea salt. Stir gently and bring the mixture to a boil over medium-high heat.
  6. Once boiling, reduce the heat to low and cover the pot with a tight-fitting lid. Allow the rice to simmer gently until the water is absorbed and the rice is tender, with grains appearing elongated and fluffy.
  7. Drizzle the saffron water evenly over the rice, using a spoon to ensure it reaches all areas. Cover the pot again and let it steam for an additional 5-10 minutes, allowing the saffron to impart its golden hue and distinct fragrance throughout the rice.
  8. Fluff the rice gently with a fork to separate the grains and distribute the saffron color evenly. Serve the saffron rice warm, appreciating its aromatic scent and vibrant color, perfect for sharing around the table.
