Ingredients

  • 500 gsauerkraut
  • 1onion
  • 2apples — diced
  • 2 tbspvegetable oil
  • 1 tspcaraway
  • 1 tspfine sea salt

Method

  1. Begin by preparing the vegetables. Peel and finely chop 1 onion into small, even pieces to ensure they cook uniformly. Core and dice 2 apples into small cubes, similar in size to the onion, to allow them to soften at the same rate.
  2. In a large, heavy-bottomed pot, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion to the pot and stir occasionally. Cook until the onion becomes translucent and soft, releasing a sweet aroma, which should take about 5 to 7 minutes.
  3. Once the onion is ready, add the diced apples to the pot. Stir them together with the onion, allowing the apples to start softening and absorbing the flavors. Continue cooking until the apples begin to break down slightly, which will take another 5 minutes or so.
  4. Add 500 grams of sauerkraut to the pot, mixing it well with the onion and apple mixture. Sprinkle in 1 teaspoon of caraway seeds, which will infuse the stew with a warm, earthy flavor as it cooks.
  5. Reduce the heat to low and cover the pot with a lid. Allow the stew to simmer gently, stirring occasionally, until the sauerkraut is tender and the flavors have melded together. You will know it's ready when the sauerkraut has a soft, yet slightly firm texture, and the stew has a harmonious aroma.
  6. Season the stew with 1 teaspoon of fine sea salt, stirring well to ensure it's evenly distributed. Taste and adjust the seasoning if necessary, keeping in mind that the sauerkraut itself can be quite salty.
  7. Serve the sauerkraut stew warm, ideally in a communal dish at the center of the table, inviting everyone to share in this comforting, traditional meal.
