West African Potato Side 2

West African Potato Side 2 is a beloved staple across home tables, where it finds its place at family meals and casual gatherings alike. This dish reflects the simplicity and warmth of West African home cooking, where salt is judged by hand, and fat is used with a generous heart. It is the essence of informal dining, meant to be shared among friends and family, its preparation handed down through generations with a casual ease.

The dish delivers a satisfying balance of crispy edges and tender insides, with a gentle heat from paprika mingling with the earthy potatoes. The flavors are straightforward yet comforting, with fine sea salt and black pepper accentuating the natural taste of the potatoes. It’s a dish that embodies the generosity of a West African table, inviting all to partake in its simple pleasures.

Ingredients

  • 1 kgpotatoes
  • 80 mloil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Peel and cut the 1 kg of potatoes into even-sized cubes, about 2 cm each. This ensures they cook uniformly, preventing some pieces from being undercooked while others are overdone.
  2. In a large, heavy-bottomed pot, heat 80 ml of oil over medium heat until it shimmers. Add the potatoes to the pot, stirring to coat them evenly with the oil. This initial coating helps the potatoes to absorb the flavors as they cook.
  3. Sprinkle 1 tsp of paprika over the potatoes, stirring well to distribute the spice evenly. The paprika will add a warm, earthy flavor and a subtle red hue to the potatoes.
  4. Continue to cook the potatoes, stirring occasionally, until they become tender. You will know they are done when a fork easily pierces through the cubes and the edges start to turn a light golden brown.
  5. Season the potatoes with fine sea salt and black pepper to taste. Stir well to ensure the seasoning is evenly distributed. Taste a piece to adjust the seasoning if necessary.
  6. Serve the West African Potato Side 2 warm, allowing the flavors to be at their peak. This dish is best enjoyed when shared, embodying the communal spirit of West African dining.
