Ingredients

  • 700 gchicken pieces
  • 1onion
  • 2carrots
  • 1.8 Lwater
  • 2 tbspolive oil
  • 1bay leaf
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing your aromatics. Peel and roughly chop 1 onion and 2 carrots. In a large stockpot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and carrots to the pot, stirring occasionally. Cook until the onion becomes translucent and the carrots start to soften, releasing their sweet aroma, about 5 to 7 minutes.
  2. Once the aromatics are softened, add 700 grams of chicken pieces to the pot. Stir to coat the chicken with the oil and vegetables, allowing the chicken to begin browning slightly. This step enhances the flavor of the broth by developing a rich base.
  3. Pour in 1.8 liters of water, ensuring the chicken and vegetables are fully submerged. Add 1 bay leaf to the pot. Increase the heat to high and bring the mixture to a gentle boil, which helps to extract flavors from the chicken and vegetables.
  4. Once boiling, reduce the heat to low to maintain a gentle simmer. Skim off any foam or impurities that rise to the surface with a spoon. This will help keep your broth clear.
  5. Continue to simmer the broth for about 1.5 to 2 hours. During this time, the chicken should become tender and the broth should develop a rich, golden color. The aroma should be deeply savory, indicating that the flavors have melded together.
  6. Taste the broth and season with fine sea salt and black pepper to your liking. Remember, the salt should enhance the flavors without overpowering them. If desired, finish with a thread of olive oil for a touch of richness before serving.
  7. Strain the broth through a fine-mesh sieve into a large bowl or another pot, discarding the solids. Your American Chicken Broth 2 is now ready to be enjoyed, either on its own or as a base for other dishes.
