Ingredients

Method

  1. Start by preparing the aromatics. Peel and roughly chop 1 onion and 2 carrots. In a large stockpot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and carrots to the pot, stirring occasionally. Cook until the onion becomes translucent and the carrots start to soften, about 5 to 7 minutes. Be careful not to let them brown, as this can add an unwanted bitter flavor to your broth.
  2. Once the aromatics are softened, add 700 g of chicken pieces to the pot. Stir the chicken pieces with the softened vegetables, allowing them to sear slightly. This step helps to develop a deeper flavor in the broth. Ensure that the chicken is evenly distributed in the pot for even cooking.
  3. Pour in 1.8 liters of water, ensuring that the chicken and vegetables are fully submerged. Add 1 bay leaf to the pot, which will infuse the broth with a subtle earthy aroma. Increase the heat to high and bring the mixture to a gentle boil.
  4. Once boiling, reduce the heat to low and let the broth simmer gently. Skim off any foam or impurities that rise to the surface with a spoon, as this will help keep the broth clear. Allow the broth to simmer for about 1 to 1.5 hours, or until the chicken is cooked through and the vegetables are very tender. The chicken should be falling off the bone, and the broth should have a rich, golden color.
  5. After simmering, taste the broth and season with fine sea salt and black pepper to your liking. Remember, the salt should enhance the flavors without overpowering them. If desired, finish the broth with a drizzle of olive oil for added richness before serving.
