American Lentil Pot 3 is a comforting dish that brings the essence of home cooking to the table. Ingredients

  • 300 gred lentils
  • 1onion — chopped
  • 2 clovesgarlic
  • 1 tspcumin
  • 1.5 Lwater
  • 1 tbspolive oil
  • 1lemon — juiced
  • to tastefine sea salt and black pepper

Method

  1. Start by finely chopping 1 onion and mincing 2 cloves of garlic. Heat 1 tablespoon of olive oil in a large pot over medium heat. Once the oil shimmers, add the chopped onion and garlic. Stir occasionally, cooking until the onion becomes translucent and the garlic is fragrant, about 5-7 minutes. Be careful not to let them brown, as this can add bitterness to the dish.
  2. Sprinkle in 1 teaspoon of cumin over the softened onions and garlic. Stir continuously for about 1 minute to allow the spice to release its aroma and infuse the oil. This step enhances the depth of flavor in the dish.
  3. Rinse 300 g of red lentils under cold water until the water runs clear to remove any dust or debris. Add the rinsed lentils to the pot, stirring to coat them in the fragrant onion and spice mixture.
  4. Pour in 1.5 L of water and stir to combine. Increase the heat to high and bring the mixture to a gentle boil. Once boiling, reduce the heat to low and let it simmer uncovered. Stir occasionally to prevent the lentils from sticking to the bottom of the pot.
  5. Simmer the lentils until they are tender and have absorbed most of the liquid, about 20-25 minutes. The lentils should be soft but still hold their shape, and the mixture should have a thick, stew-like consistency.
  6. Cut the lemon in half and squeeze the juice into the pot, being careful to catch any seeds. Stir well to incorporate the citrus, which brightens the flavors of the dish.
  7. Taste the lentil pot and season with fine sea salt and black pepper to your preference. Adjust the seasoning gradually, tasting after each addition to ensure the flavors are balanced. Serve warm, garnished with a drizzle of olive oil if desired, and enjoy with family or friends.
