Ingredients

  • 600 gbeef shank — cubed

Method

  1. Begin by preparing your aromatics. Peel and finely chop 1 onion. In a large pot, heat 2 tablespoons of oil over medium heat. Once the oil shimmers, add the chopped onion, stirring occasionally. Cook until the onion becomes translucent and soft, releasing its sweet aroma, but ensure it does not brown.
  2. While the onion is cooking, peel and slice 2 carrots into thin rounds. Once the onion is ready, add the carrots to the pot. Stir them into the onions and let them cook together until the carrots start to soften slightly, which should take on a brighter orange hue.
  3. Now, introduce the main protein. Add 600 g of beef shank to the pot. Stir to coat the beef with the onion and carrot mixture, allowing it to sear lightly on all sides. This will help develop a deeper flavor in your soup.
  4. Pour in 1.8 liters of beef broth, ensuring the beef and vegetables are fully submerged. Increase the heat to bring the broth to a gentle boil. Once boiling, reduce the heat to low and let it simmer. The beef should become tender and the broth rich in flavor, which typically takes on a deeper color and a savory aroma.
  5. As the soup simmers, periodically check the texture of the beef. It should be tender enough to pull apart easily with a fork. This is your cue that the soup is nearing completion.
