Ingredients

  • 700 gchicken pieces
  • 1onion
  • 2carrots
  • 1.8 Lwater
  • 2 tbspolive oil
  • 1bay leaf
  • to tastefine sea salt and black pepper

Method

  1. Start by heating 2 tablespoons of olive oil in a large pot over medium heat. Once the oil is shimmering, add 1 chopped onion. Stir occasionally, allowing the onion to soften and become translucent, which should take about 5 minutes. Be careful not to let the onion brown, as this could affect the flavor of your broth.
  2. Add 700 g of chicken pieces to the pot, ensuring they are in contact with the base. Sear the chicken pieces for a few minutes on each side until they are lightly golden. This step helps to build a deeper flavor in the broth.
  3. Peel and slice 2 carrots into rounds and add them to the pot. Stir them in with the chicken and onions, allowing them to start softening. The carrots will add a natural sweetness to the broth.
  4. Pour in 1.8 liters of water, making sure the chicken and vegetables are fully submerged. Add 1 bay leaf to the pot. Increase the heat to high and bring the mixture to a gentle boil.
  5. Once boiling, reduce the heat to low and let the broth simmer gently. You want to see small bubbles breaking the surface occasionally. Simmer for about 45 minutes, or until the chicken is cooked through and the carrots are tender.
  6. Taste the broth and season with fine sea salt and black pepper to your liking. The flavors should be balanced, with the salt enhancing the natural flavors of the chicken and vegetables.
  7. Finish the broth by removing the bay leaf and any excess fat that may have risen to the surface. Serve the broth hot, ensuring each bowl gets a good mix of chicken and vegetables, and enjoy the comforting flavors of this Brazilian classic.
