This dish is a reflection of the Brazilian approach to cooking — a pinch of salt measured by feel, a splash of olive oil that glistens on the surface, and a pot that always seems to hold enough for one more guest. It's a dish that transforms humble ingredients into something greater, often gracing the family table with its comforting presence.

Ingredients

  • 300 gred lentils
  • 1onion — chopped
  • 2 clovesgarlic
  • 1 tspcumin
  • 1.5 Lwater
  • 1 tbspolive oil
  • 1lemon — juiced
  • to tastefine sea salt and black pepper

Method

  1. Start by finely chopping 1 onion and mincing 2 cloves of garlic. In a large pot, heat 1 tablespoon of olive oil over medium heat. Once the oil shimmers, add the chopped onion and garlic. Stir frequently, allowing them to soften and become translucent, which will take on a sweet aroma. Be careful not to let them brown, as this will add a bitter taste to the dish.
  2. Once the onion and garlic are softened, stir in 1 teaspoon of cumin. Cook for another minute, stirring constantly, until the cumin releases its warm, earthy fragrance. This step builds the aromatic base for the dish, crucial for the depth of flavor in the lentils.
  3. Rinse 300 grams of red lentils under cold water until the water runs clear. Add the rinsed lentils to the pot, stirring to coat them in the aromatic base. Pour in 1.5 liters of water, ensuring the lentils are fully submerged. Increase the heat to high and bring the mixture to a gentle boil.
  4. Once boiling, reduce the heat to low and cover the pot, allowing the lentils to simmer gently. Stir occasionally to prevent sticking. The lentils are done when they are tender and have absorbed most of the liquid, creating a thick, stew-like consistency. The lentils should be soft but still hold their shape.
  5. Season the lentil pot with fine sea salt and black pepper to taste, stirring well to distribute the seasoning evenly. Cut a lemon in half and squeeze the juice into the pot, adding brightness and balancing the flavors. Stir in the juice thoroughly.
  6. Finish the dish by drizzling a little more olive oil over the top for richness. Serve the Brasileiro Lentil Pot warm, inviting everyone to gather around the table and share in this comforting, flavorful dish.
