It's a reflection of everyday Caribbean life, where the kitchen is the heart of the home, and meals are a communal affair.

The dish is a warm embrace of earthy red lentils, softened to perfection in a fragrant bath of cumin and garlic. A squeeze of lemon adds a bright note, cutting through the richness provided by a generous splash of olive oil. Ingredients

  • 300 gred lentils
  • 1onion — chopped
  • 2 clovesgarlic
  • 1 tspcumin
  • 1.5 Lwater
  • 1 tbspolive oil
  • 1lemon — juiced
  • to tastefine sea salt and black pepper

Method

  1. Start by finely chopping 1 onion and mincing 2 cloves of garlic. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic to the pot, stirring occasionally. Cook until the onion becomes translucent and the garlic releases its aroma, ensuring they do not brown.
  2. Introduce 1 teaspoon of cumin to the pot, stirring it into the softened onions and garlic. Allow the cumin to toast gently, releasing its warm, earthy fragrance. This step builds the fragrant base essential for the dish.
  3. Rinse 300 g of red lentils under cold water until the water runs clear. Add the rinsed lentils to the pot, stirring them into the aromatic mixture. This ensures the lentils are well-coated with the flavors before adding liquid.
  4. Pour in 1.5 liters of water, stirring to combine. Increase the heat to bring the mixture to a gentle simmer. Once simmering, reduce the heat to maintain a gentle bubble, allowing the lentils to cook slowly and absorb the flavors.
  5. Simmer the lentils, stirring occasionally, until they become tender and begin to break down, creating a creamy texture. This should take about 20-30 minutes, but check the texture to ensure the lentils are soft and the liquid has thickened slightly.
  6. Once the lentils are cooked to the desired consistency, season the pot with fine sea salt and black pepper to taste. Cut the lemon in half and squeeze the juice into the pot, stirring well to incorporate the citrus brightness.
